In recent years, food safety has become a public concern, therefore, several strategies for this problem have been proposed by government, however, the food security accident still happen. With the recommends of supply chain, the increase of business flow and logistics and the extend of the whole chain, the risk of food safety and food quality information loss are increasing. The asymmetric and symmetric incomplete information on food market have caused incalculable economic losses to the society and enterprise. Food is a basic material condition for human survival and continuation, its quality and safety issue is not just economic issues and social issues, under certain conditions; it will be transformed into a political issue. Thus, there is no doubt that food security has become one of the world's focuses. During these years, under the background of the demand of domestic to international market, the development and change, the food quality and safety issues has been attached great importance from the central to the local.
This paper is divided into four parts; the first part is an introduction, which discusses the background, significance of the subject. At the beginning, the analysis of home and abroad research in this field has been put forward by literature review. With the current actual situation of the food industry, the research questions of this thesis has been proposed, that is, based on home and abroad relevant research results, dialectical citation of existing research results, and combined with China's actual development and the practical needs, our research talks about the main behavior analysis of food safety information and effective delivery. The second part mainly describes the theoretical analysis of multi-level, multi-angle and multi-disciplinary to information transfer main behavior by asymmetric information theory, transaction cost theory and game theory. Based on the theoretical analysis and the impact on food safety by the difference of the information transmission, combined with the contact of food prices, costs, production efficiency, social effects and so on, mathematical model of the main behavior of food safety information transmission has been build. At the third part, it listed food safety events in the past five years, identified the key points about the supply chain of food safety information transfer. It verified the mathematical model in second part by several little-known empirical cases. The last part is the summary of the paper, some policy recommendations for the corresponding problem were came up to standardize and improve the food markets, reduce food safety problems.
