摘 要：本论文以磷脂、双氧水、乳酸为主要原料对大豆磷脂进行羟基化反应，用正交实验方法对羟基化条件进行优选,用标准方法测试产品的各种性能，包括了碘值、过氧化值、酸价、水分，从而得到了最佳反应条件,同时也得出了磷脂碘价、过氧化值、酸价与改性磷脂亲水性能的关系。改性后的浓缩磷脂碘价降低, 亲水性能明显提高，拓宽了磷脂的应用范围,更好地满足工业上的需要。羟化反应各因素对碘价、酸值、过氧化值等品质都有影响,因此可以通过控制生产条件得到亲水亲油性能不同的改性磷脂产品。
